Great afternoon snacks, these yummy mini pizzas are a fun way to get kids to eat soybeans!

Chopped red pepper strips

Sliced zucchini

Soy crumbles
|
Heat oven to 450°F. Place soybeans, barbecue sauce and onion in 10-inch skillet. Cook over medium heat, stirring occasionally, until sauce is slightly thickened and mixture is heated through (3 to 5 minutes).
Place pizza crusts on large ungreased baking sheet. Top each with
1/3 cup soybean mixture, your choice of toppings and
1/3 cup cheese. Bake until heated through (7 to 10 minutes).
