Barbecue Bean Pizzas
Great afternoon snacks, these yummy mini pizzas are a fun way to get kids to eat soybeans!

Preparation Time: 15 min.  
Baking Time: 7 min.  
Servings: 3 pizzas

Ingredients:

1    (15-ounce)  can (1 1/4 cups) cooked soybeans, rinsed, drained
1/3    cup barbecue sauce
3    tablespoons chopped onion
3    (7-inch) prebaked mini pizza crusts
4    ounces (1 cup) Alpine Lace® Deli Reduced Fat White American Cheese, shredded

Toppings Ingredients:

  
   Chopped tomatoes
   Corn
   Chopped red pepper strips
   Sliced zucchini
   Soy crumbles

Instructions:
    Heat oven to 450°F. Place soybeans, barbecue sauce and onion in 10-inch skillet. Cook over medium heat, stirring occasionally, until sauce is slightly thickened and mixture is heated through (3 to 5 minutes).

    Place pizza crusts on large ungreased baking sheet. Top each with 1/3 cup soybean mixture, your choice of toppings and 1/3 cup cheese. Bake until heated through (7 to 10 minutes).
