These easy wraps have the Italian flavors of garlic, tomatoes and cannellini beans.

(15-ounce) can cannellini beans, rinsed, drained
|
| 1 |

tablespoon water
|
| 4 |

(9 to 10-inch) pesto and garlic flour tortillas
|
| 1/4 |

cup pesto
|
| 4 |
|
(1 cup) Roma tomatoes , thinly sliced
|
| 1/4 |
|
cup red onion, hlaved, thinly sliced
|
| 1/4 |
|
cup sliced ripe olives
|
| 2 |

ounces (1/2 cup) Alpine LaceĀ® Deli Reduced Fat Swiss or Provolone Cheese, shredded |
Place beans and water in small bowl. Mash with fork or pastry blender.
Spread about
1/4 cup
beans to within 1/2 inch of edge of tortillas. Gently spread
1 tablespoon
pesto over beans on each tortilla; top with about 1/4 cup
tomatoes,
1 tablespoon
onion,
1 tablespoon
olives and
2 tablespoons
cheese. Roll up.
TIP:
Cannellini beans hale from Italy and are classified as large, white kidney beans. They are tender and mild in flavor and often used in soups and salads. Great Northern beans are an excellent substitution if cannellini beans are unavailable in your area.
*Substitute 4 (8-inch) plain flour tortillas.
