This grilled panini sandwich as all the flavors of your favorite southwestern cuisine.

Servings: 6 sandwiches
Cut bread in half vertically; slice each piece in half horizontally. Combine all remaining ingredients except cheese in large bowl; stir to combine.
Place chicken mixture onto bottom half of bread; top with cheese and top half of bread. Cut sandwich in half.
Heat panini grill or 10-inch skillet on medium heat.
Spray sandwiches with no-stick cooking spray. Place 1/2 sandwich onto panini grill. Grill until golden brown (5 to 8 minutes). Repeat with remaining sandwich; cut each into 3 wedges.
*Substitute barbecue sauce.
TIP:
For a time-saving step, buy a rotisserie chicken from the deli and shred as needed.

If using skillet, cook over medium heat, turning once, until golden brown (3 to 4 minutes).
