Southwestern Chicken & Cheddar Panini
Southwestern Chicken & Cheddar Panini
This grilled panini sandwich as all the flavors of your favorite southwestern cuisine.

Preparation Time: 10 min.  
Grilling Time: 5 min.  
Servings: 6 sandwiches

Ingredients:
  
1    (10-inch) focaccia bread
2    cups cooked shredded chicken
1    cup seasoned black beans, rinsed, drained
1/2    cup chopped fresh cilantro
1    (8 3/4-ounce) can whole kernel corn, drained
3/4    cup chipotle barbecue sauce*
6    (3/4-ounce) slices Alpine LaceĀ® Deli Reduced Fat Cheddar or Reduced Fat American Cheese

Instructions:
    Cut bread in half vertically; slice each piece in half horizontally. Combine all remaining ingredients except cheese in large bowl; stir to combine.

    Place chicken mixture onto bottom half of bread; top with cheese and top half of bread. Cut sandwich in half.

    Heat panini grill or 10-inch skillet on medium heat. Spray sandwiches with no-stick cooking spray. Place 1/2 sandwich onto panini grill. Grill until golden brown (5 to 8 minutes). Repeat with remaining sandwich; cut each into 3 wedges.

    *Substitute barbecue sauce.

    TIP: For a time-saving step, buy a rotisserie chicken from the deli and shred as needed.

    TIP: If using skillet, cook over medium heat, turning once, until golden brown (3 to 4 minutes).
