Apple Cheddar Quesadillas
Apple Cheddar Quesadillas
Sliced cooked apples, dried cranberries and Cheddar cheese make a delightful combination for quesadillas.

Preparation Time: 10 min.  
Cooking Time: 11 min.  
Servings: 4 quesadillas

Ingredients:
  
1/4    cup firmly packed brown sugar
1    tablespoon LAND O LAKESĀ® Butter
1    medium (2 cups) tart apple, sliced 1/8-inch
1/4    cup sweetened dried cranberries
4    (7-inch) low fat whole wheat tortillas, warmed
4    (3/4-ounce) slices Alpine LaceĀ® Deli Reduced Fat Cheddar or American Cheese, cut in half diagaonally

Instructions:
    Combine brown sugar and butter in 10-inch skillet. Cook over medium heat, stirring occasionally, until bubbly (2 to 3 minutes). Add apple slices; continue cooking until slices are tender (5 to 8 minutes). Stir in dried cranberries. Remove from heat.

    Heat 10-inch skillet or electric griddle over medium heat. Spray 1 side of each tortilla with no-stick cooking spray. With sprayed-side down, evenly place 1/4 apple mixture onto each tortilla; top with 2 cheese halves. Fold tortillas in half over mixture; place 2 quesadillas into skillet. Cook, turning once, until golden brown (3 to 5 minutes). (If necessary, wipe out skillet with paper towels.) Repeat with remaining quesadillas.

    TIP: For a great topping idea, mix 1/2 cup low fat plain yogurt with 2 teaspoons honey and 1/2 teaspoon ground cinnamon. Top quesadillas with a dollop of yogurt mixture.
