Bean & Vegetable Stew
This hearty stew is quick-to-make and full of great flavor.

Preparation Time: 10 min.  
Cooking Time: 20 min.  
Servings: 6 (1-cup) servings

Ingredients:
  
1    tablespoon LAND O LAKESĀ® Butter
4    medium (1 1/2 cups) carrots, sliced 1/4 inch
1    medium (1 cup) red onion, cut into 1/2-inch pieces
1    medium (1 cup) green bell pepper, cut into 1-inch pieces
1    teaspoon  dried thyme leaves
1    teaspoon  rubbed sage
1/4    teaspoon  salt
1/4    teaspoon  coarse ground pepper
1    teaspoon finely chopped fresh garlic
1    (15 1/2-ounce) can pinto beans, undrained
1    (15-ounce) can great Northern beans, undrained
1    (14 1/2-ounce) can diced tomatoes, undrained
2    (3/4-ounce) slices Alpine LaceĀ® Deli Reduced Fat Provolone Cheese, cut into thin strips

Instructions:
    Melt butter in 3-quart saucepan; add all remaining ingredients except beans, tomatoes and cheese. Cook over medium-high heat, stirring occasionally, until vegetables are browned and very tender (12 to 15 minutes).

    Stir in beans and tomatoes. Continue cooking, stirring occasionally, until heated through (8 to 10 minutes). Serve with shredded cheese, if desired.
